This is a nostalgic old dish my nana used to make and a great way to use home grown tomatoes, that giant Zuchini from yesterday, that last onion at the bottom of the cupboard and stale old bread. Simply grab a baking dish and layer slices of zucchini, tomatoes, onions, crumbled bread, olive oil, herbs, salt and pepper in that order. Keep layering until your dish is full with the bread layer on top. Pop a lid or recycled foil on top and bake in a moderate over for about 45mins or until tender and smelling amazing. Take the lid off and crisp up. I like to serve mine with a brown, red and wild rice, turmeric and lentil pilaf. Bon appetit!
